Tiivistelmä
The main goal of the following thesis work is to create a Scandinavian menu for the restaurant Talli. Menu has to be useful and suitable. It is planned to serve a menu after planning. Menu will be planning for three days.
Research methods are used to collect data. Personnel real observation and questionnaire were applied. Interview with restaurant staff, managers and chef were made to create a correctly made menu and plan it well.
It is expected to offer new dish suggestion for Talli as a result. Plan a well-balanced menu according to survey results as well. Get professional skills in cooking Scandinavian cooking. Make wine and waste suggestions for Talli.
