Leipomotilan kehittäminen 5S-menetelmän avulla : case : Viipurilainen Kotileipomo Oy

Abstract

Opinnäytetyön tarkoituksena on kehittää Viipurilainen Kotileipomo Oy:n tuotantotilaa. Tavoite on luoda siisti ja järjestyksessä oleva leipomo, jossa on mielekästä työskennellä. Siisti ja järjestyksessä oleva tuotantotila tekee työstä tehokasta, laadullista, viihtyisää ja turvallista. Tavoitteeseen pyrittiin Lean-työkaluihin kuuluvan 5S-menetelmän avulla.

5S on viisiportainen työorganisointiin liittyvä menetelmä, ja hyvät kokemukset siitä saivat minut valitsemaan juuri tämän menetelmän tähän työhön. Työn toteutuksessa halusin painottaa tämän menetelmän soveltamista, koska kaavamainen tapa ei tullut kyseeseen. Työ tehtiin ilman kaavoja ja lippuja sisällyttäen silti 5S:n idean. Kaikki menetelmän viisi vaihetta käytiin läpi työn aikana.

Työn toteutuksessa ilmeni monia haasteita, niitä olivat muun muassa pääoman riittävyys, perheomistajuus ja henkilöstön sitoutuminen. Haasteiden myötä kaikkia suunniteltuja muutoksia ei toteutunut. Siitä huolimatta tuotantotilaa saatiin kehitettyä parempaan suuntaan, ylimääräiset tavarat hävitettiin ja loput järjesteltiin. Tuloksena tuotantotilasta tuli järjestelmällisempi, joka johtaa parempaan työntekoon. Kokonaisuudessaan työ onnistui vaaditulla tavalla.

The purpose of this thesis is to develop Viipurilainen Kotileipomo Oy production space. The goal is to create a neat and orderly bakery where working is comfortable. Neat and orderly production space makes working safer, more effective, qualitative and comfortable. To accomplish goals, a Lean tool, 5S method was used. 5S is a five-step workplace organization method. A goog previous experience of the method led me to choose it for this project. In the implementation I wanted to emphasize the importance of application of this method because a schematic way did not fit in this project. The work was carried out without formulas but still including the main ideas of 5S. All of the five steps of the method were dicussed during the work. There were many challenges during the work, among them were sufficiency of funds, family ownership and commitment of the employees. Because of the challenges all of the goals were not executed. Nevertheless the production place was developed for the better, spare items were exterminated and rests of the items were reorganized. As a result production space came more organized, this leading to better workplace. Altogether the work succeeded in the required manner.
