Laatujärjestelmän päivittäminen, IFS 6- ja ISO 22000 -standardien vertailu

Abstract

Opinnäytetyön tavoitteena oli luoda ISO 22000 -standardin vaatimukset täyttävä laatujärjestelmä rahti- ja sopimuspakkaaja-alan yritykselle. Lisäksi tavoitteena oli kirjata laatujärjestelmään IFS 6 -standardin kohdat, joiden vaatimukset yritys jo täyttää. Laatujärjestelmän pohjana käytettiin sisaryhtiön laatukäsikirjaa. Laatujärjestelmä tehtiin yrityksen tiloissa. Työssä tutustuttiin yrityksen prosesseihin ja asiakirjoihin perusteellisesti, minkä jälkeen laatujärjestelmä päivitettiin yhdessä vastuuhenkilöiden kanssa. Työ koostuu kirjallisuusselvityksestä, käytännön työn kuvauksesta, tuloksista ja johtopäätöksistä. Kirjallisuusselvityksessä käydään läpi elintarvikealan standardeja ja verrataan työssä käytettyjä standardeja keskenään. Käytännön työn kuvauksessa esitellään laatujärjestelmän päivityksen työvaiheet. Työn tuloksissa esitellään laatujärjestelmän päivitetyt osiot kuten prosessikuvaukset ja puhdistusohjeet. Johtopäätöksissä pohditaan laatujärjestelmän päivitysprosessin kehittämistä eli esimerkiksi, miten ajankäyttöä voidaan tehostaa.

The purpose of this thesis was to build a quality system in compliance with the standard ISO 22000 for a freight packaging company. Furthermore, the goal was to document the requirements of the IFS 6- standard that the company already fulfills. The basis for the quality system was the existing quality manual of a sister company. The implementation was made at the company premises. After a thorough familiarizing with the processes and documents used in the company at that time, the quality system was updated with the people in charge. The thesis consists of the following sections: Theory, practical work at the premises, results and conclusions. The theory section introduces the standards of the food industry and compares the standards used in the formulation of the quality system. The practical work at the premises section introduces different stages of the updating process of the quality system. The results section introduces the updated parts of the quality system. The conclusions discusses the development of the quality system process.
