Fusion cuisine is popular worldwide. This genre of cuisine allows different kind of culinary traditions to combine and create exceptional experience. This practice-based thesis focuses on the mixture of Bangladeshi flavours with Chinese food techniques and adding halal food in the recipes of Gastrobar Saimaa.
A practice-based thesis method was employed,including recipe development, restaurant management and customer feedback analysis. The thesis also focuses on marketing, restaurant operations, feedback analysis, learning outcomes, challenges that was encountered emphasizing on Bangladeshi food and their fusion restaurants.
The thesis provides insightful information about the interest in cross-cultural pop-up events among locals and international people. Also, the need of halal food in university premises and in Lappeenranta as well.
