This thesis explores how small Finnish restaurants can reduce paper use by adopting simple, low-cost digital tools. Although Finland is highly digitalized, many small restaurants still rely on paper for ordering, inventory management, scheduling, and administrative tasks. A qualitative case study of three restaurants—Armandos, Söder Pippuri, and PortSide Trattoria—was conducted using semi-structured interviews and observations. Thematic analysis, supported by TAM and UTAUT, revealed that staff resistance, limited digital skills, time pressure, and cost concerns hinder digital adoption. Despite these challenges, all participants recognised clear benefits. The study offers practical recommendations to help restaurants transition gradually toward more paperless workflows.
