Tiivistelmä
The purpose of this thesis was to examine the potential for opening a Ukrainian-themed coffee shop in Kajaani, based on consumer preferences, and to deepen understanding of coffee consumption habits in Kajaani city in the context of coffee consumption and habits. To collect data, an online quantitative survey was used and shared on social media among adults and via e-mail among Kajaani University students, living in Kajaani and the Kainuu region, who drink coffee at least occasionally.

The goal of this thesis was to analyse consumers’ preferences, needs, behaviour and their attitude towards possible new coffee options and a coffee shop with a Ukrainian-style concept. The commissioner of the thesis was the author.

The findings showed that coffee consumption was frequent among respondents in the Kajaani area, while café visits were generally more occasional. The most important factors influencing coffee shop choice were friendliness of staff, quality and taste of coffee, atmosphere and location. The results also indicated interest in product variety, drink customisation, and some coffee flavours, although preferences were mainly directed towards familiar and classic options.

Overall, the findings suggest that a Ukrainian-style coffee shop concept may have potential in Kajaani, but new offerings have to be combined with familiar options and with standard café expectations. However, further research is needed to evaluate its viability or non-viability more clearly. Although the study has limitations, it provides some basis for future research on coffee consumption, café preferences, and the viability of a Ukrainian-style coffee shop concept in Kajaani.
