Tiivistelmä
Opinnäytetyön tavoitteena oli suunnitella pohjapiirustus leipomoalan yrittäjälle AutoCAD-suunnitteluohjelmiston avulla. Opinnäytetyön toimeksiantajalla oli tarve uusille tuotantotiloille, jotka vastaisivat paremmin yrityksen nykyistä tuotantoa ja mahdollistaisivat tuotannon laajentamisen tulevaisuudessa. Opinnäytetyön toimeksiantajana toimi turkulainen leipomo-konditoria MBakery.
Opinnäytetyön tarkoituksena oli tehdä suunnitelma siitä, miten leipomotilat voitaisiin toteuttaa ennalta katsottuihin vuokratiloihin. Nämä vuokratilat eivät ole aiemmin olleet elintarviketuotantotilakäytössä. Suunnitteluvaiheessa otetiin huomioon tontin rajoitteet, tutustuttiin elintarvikehuoneistoa koskevaan lainsäädäntöön, keskusteltiin opinnäytetyön toimeksiantajan toiveista sekä mitattiin asioiden toimivuutta sijoitteluvaiheessa. Myös opinnäytetyön tekijän oma työkokemus leipomoalan tuotantolaitoksessa työskentelystä antoi näkökulmaa tilojen toimivuuden suunnitteluun.
Opinnäytetyön tuloksena syntyi pohjapiirustus, johon oltiin tyytyväisiä. Toimeksiantajan ennalta valitsemiin tiloihin saatiin suunniteltua layout tehdasleipomolle, vaikka tilat eivät aiemmin vastaavanlaisessa käytössä olleetkaan. The objective of this thesis was to design a layout for a bakery. The layout was designed by using AutoCAD computer software. The client needed new production premises which would be more in line with the company’s current production needs and would give a better foundation for future expansions inside the factory. The client of this thesis was bakery-confectionery MBakery which is located in Turku, Southwest Finland.
The thesis was to compile a plan for the execution of the bakery layout in the rental premises selected at the beginning of the thesis project. The premises in question had not been in food industry use before. In the drafting phase, the limitations of the property were taken into account, food legislation concerning premises was studied, the client’s wishes regarding the factory layout were discussed, and the functionality of the layout was contemplated based on the author’s 4-year work experience in the field. The author’s personal experience also facilitated decision-making process and gave some perspective in the planning phase.
The result of this thesis was a layout for the upcoming factory which the client was pleased with. The new MBakery factory layout was successfully designed for the rental premises. This project in its entirety allows MBakery to transfer their production successfully to the premises in question even though the property has never been in food industry use before.
