Tiivistelmä
Opinnäytetyön tarkoituksena oli tuottaa lakto-ovovegetaarisen kasvisruokavalion mukaisia ruokaohjeita Keski-Suomen sairaanhoitopiirin Ruokapalvelun liikelaitos Caterinan KahvilaravintolaCaterinan käyttöön. Kasvisruokien tuli olla helposti sovellettavissa myös Keski- Suomen sairaanhoitopiirin potilasruokailuun. Kasvisruokaohjeiden suunnittelussa oli otettava huomioon muun muassa ravitsemuksellinen laatu, raaka-ainekustannukset, ruoan maku, ruoan ulkonäkö ja valmistusmenetelmät. Opinnäytetyö toteutettiin tuotekehitystyönä. Työn tekeminen aloitettiin etsimällä kasvisruokaohjeita, joista valittiin parhaimmat ja jotka muokattiin ruokakokeiluihin sopiviksi. Käytännön tuotekehitystyö tapahtui Jyväskylän ammattikorkeakoulun matkailu-, ravitsemis- ja talousalan yksikön tiloissa. Tuotekehitystyössä tehtyjen ruokakokeilujen tuotokset arvioitiin aistinvaraisesti, minkä jälkeen valmiit ruokaohjeet kirjattiin Ruokapalvelun liikelaitos Caterinan Aromi- ohjelmistoon. Aromi-ohjelmistostasaatujen ruokaohjeiden tietojen perusteella arvioitiin tuotekehitystyön tuloksia. Tuotekehitystyön tuloksena syntyi 36 kasvisruokaohjetta. Ravitsemukselliset tavoitteet saavutettiin lähes täysin. Energian määrä oli suuri, mutta se jakautuiravintoaineiden kesken lähes ravitsemuksellisen laadun lähtökohtana olleiden suomalaisten ravitsemussuositusten mukaisesti, eikä ylittänyt toisena lähtökohtanaollutta Sydänliiton ateriakohtaista suositusta. Suolan saanti ylitti ateriakohtaisen suosituksen. Ravintokuidun suhteen tulokset olivat hyvät, sillä ruoista sitä sai runsaasti. Raaka-ainekustannusten keskiarvo ylitti todella vähän raaka- ainekustannusten ylärajan, mikä johtui lähinnä pääruoan isosta annoskoosta. Tuotekehitystyön tulosten perusteella ehdotettiin, että Kahvila-ravintola Caterinassapienenne ttäisiin pääruoan annoskokoa. Annoskoon pienentämisellä ruoasta saatavan energian määrä vähenisi ja raaka-ainekustannukset pienenisivät. Muutos olisi ravitsemuksellisesti suotuisa asiakkaille ja kustannustehokas Kahvila-ravintola Caterinan kannalta. Uusien kasvisruokaohjeiden myötä Kahvila-ravintola Caterinankasvisruokien ravitsemuksellinen laatu parani ja ruokalistaan saatiin toivottuavaihtelua. The purpose of the thesis was to produce lacto-ovovegetarian recipes to be used in the Restaurant Caterina of the Central Finland Health Care District Catering service Caterina. The new vegetarian dishes would also have to be easily adaptable to be prepared for patients in the Central Finland Health Care District. Factors to be considered when designing the vegetarian dishes were: nutritional quality, material costs, the preparation methods as well as what the dishes looked and tasted like The bachelor's thesis was conducted as a product development project. The project's first step was to search for vegetarian recipes. The best recipes were chosen to be revised so that they would be suitable for testing the dishes. The actual product development was conducted on the premises of the School of Tourism and Services management of Jyväskylä University of Applied Sciences. The results of testing the dishes were estimated after which the comp leted recipes were entered into Aromi software at the Catering Service Caterina. The Aromi-software produced information about the recipes which was then used in the analysis of the results of the product deve lopment. As a result of the product development 36 vegetarian recipes were developed. Nutritional targets of the dishes were accomplished almost entirely. The total amount of energy was high but it was equally distributed between the nutrients and was almost in accordance with the Finnish nutritional recommendations, one of the defining factors of the product development. In addition, the total amount of energy did not exceed the nutritional recommendation per meal given by the Finnish Heart Association. The dishes contained the right amount of dietary fibre but the amount of sodium was higher than the recommendation for a meal. The material costs slightly exceeded the top limit which was mainly due to the big size of the portion of the main course. Based on the results of the product development, it was suggested that the size of the portions of the main course shouldbe decreased. By decreasing the size of the portion, the amount of energy and material costs per meal would decrease. The change would be nutritionally beneficial to the customers and cost-effective to the restaurant Caterina. Due to the new vegetarian recipes, the nutritional quality of vegetarian food at the restaurant Caterina improved and the new vegetarian dishes gave a welcomed change to the menu.
