Tiivistelmä
Tämän kehittämishankkeen tarkoituksena on tarkastella sitä, kuinka tutkinnonperusteissa vaadittu ammattitaito voidaan näyttää ja todentaa hotelli- ja ravintola-alan perustutkintoa, ravintolakokin suuntautumisvaihtoehtoa suoritettaessa. Näyttötutkintojärjestelmä perustuu vuonna 1994 säädettyyn ammattitutkintolakiin. Näyttötutkinnot ovat ammattitaidon hankkimistavasta ja aikaisemmasta koulutuksesta riippumaton, tutkintotoimikuntien ja Opetushallituksen valvoma menettely. Näyttötutkinto tehdään antamalla näytöt tutkinnoissa vaaditusta ammattitaidosta. Hankkeessa kuvaan miten näyttötutkintoprosessi toteutuu Amiedussa. Käsitys tiedosta vaikuttaa opetukseen näyttöön valmistavassa koulutuksessa. Koulutuksen sisältö ja kesto määritellään aikaisemman koulutuksenja työkokemuksen perusteella henkilökohtaisessa opiskeluohjelmassa (HOPS). Ammattitaidon oppiminen ja arvioiminen perustuu aina johonkin viitekehykseen: ihmiskäsitykseen, käsitykseen tiedon olemuksesta ja oppimisesta. Kehittämishankkeessa tarkastellaan oppimisprosesseja kognitiivisen, konstruktiivisen, behavioristisenja humanistisen oppimiskäsityksen lähtökohdista. Oma lukunsa löytyy sille, kuinka käsitykset oppimisesta todentuvat näytössä. Esityksessä otetaan näkökulmia eri käsityksiin ammattitaidosta ja tarkastellaan ammattipätevyyden keskeisiä tekijöitä sekä yleisiä työelämävalmiuksia. Kuvaan arvioinnin tehtäviä, arvioinnin kohteita ja kouluttajan sekä ohjaajan ihmis- ja oppimiskäsitysten vaikutuksesta arviointiin. Arvioinnin helpottamiseksi ja yhdenmukaistamiseksi, sen pohjana käytetyt työtapahtumat ja työnkuvat tulisivat olla samantyyppisiä. Amiedun käyttämien ravintolakokin perustutkinnon henkilökohtaisten näyttötutkintosuunnitelmien etusivulle -kohtaan miten näytetään- olen laatinut esimerkinomaiset työnkuvat. Näytössä opiskelija osoittaa, miten hyvin hän on saavuttanut ammatillisten opintojen tavoitteet ja työelämän edellyttämän ammattitaidon. Tieto ja ammattitaito tulee esiin tekemisen kautta. Näytössä korostuu tiedon ja taidon suhde: Tieto josta puuttuu taitoelementti, ei yleensä ole käyttökelpoista. Näytön voi hyvällä omatunnolla arvioida hyväksytyksi kun työssäoppimisen ja näytön aikana oppilas kasvaa passiivisesta vastaanottajasta toiminnan subjektiksi. The purpose of this development scheme is to view how the professional skills required in the degree curriculum can be shown and verify. The degree in question here is the basic degree in hotel and restaurant area, namely the restaurant cookoption. Performance-based degree system is based on the law on professional degrees set in 1994. The performance-based degrees are independent procedure, governed by the degree committees and the Ministry of Education. The degree is made by giving controlled work performances in the required professional skills. In the scheme I shall depict how the process is actualized in Amiedu. The conception of knowledge has an impact on the pedagogical aspects in the preparatory theoretical training. The content and length of training is defined by the former education and work experience of the applicant in the personal study programme (HOPS). The assessment of the professional learning is always based on some frame of reference: conception of the person as a whole, knowledge and learning. Here the learning processes are viewed fromthe standpoints of cognitive, constructional, behaviouristic and humanistic learning viewpoints. In a separate chapter I depict the actualization of these viewpoints in the vocational skills demonstration. Also in the work, different angles of the conceptions of professional skills aretaken and furthermore the central factors of professional competence and general preparedness are considered. In this work, I depict the function and the targets of assessment and the impact of the trainers and tutors perception towards whole person and learning as a process. In order to ease and harmonize the assessment, the actual work events and work descriptions should be of similar type. In the section of the personal demonstrational-based degree plans used by Amiedu - called "How to demonstrate" - I have written some exemplary job descriptions. In the vocational skills demonstration, the learner shows, how well he or she has achieved the goals of vocational studies and the professional skill level required by the working life. Knowledge and professional skills become visible through doing. Also in the display of skills the relation between knowledge and skills is emphasized. Knowledge in which the skill element is missing is not generally applicable. The vocational skills demonstration can with good conscience be assessed as approved only when during the process of work-based learning and its demonstration the learner grows from passive receiver to functional subject.
