Shifting consumer behaviour towards food is having a significant impact globally. While there is an upward trend in consumption of plant-based food in western countries, increasing levels of affluence in developing countries are driving demand for meat and dairy at a much faster rate. There is compelling evidence of the detrimental effects of intensive livestock farming on the environment and on public health.
Nordic food producers have seen the environmental awareness of a small portion of the population as a business opportunity to develop innovative products that are appealing, convenient and sustainable. This research project investigated the growth of the plant-based market in Finland. As there is limited research on this novel industry, the main objective of the study was to gain insight into the situation of emerging businesses in the plant-based market.
A sample of small to medium-sized food producers from the Nordic countries participated in the implementation of the study. Qualitative research methods allowed to identify strengths, opportunities, and challenges in their supply chains. In addition, this study evaluated the effectiveness of a life cycle assessment as a method for continuous improvement.
