Tiivistelmä
In this work I discuss three heat recovery possibilities in professional kitchens. They are ventilation heat recovery, heat recovery from cooling machines and waste water heat recovery.
First I explain special features of professional kitchen ventilation. Then I go over different types of ventilation heat recovery and their advantages and disadvantages. Also filters are described as very important component of heat recovery in professional kitchens. Then I present measurements in practical case, calculations based on the figures and alternatives.
Then I describe cooling process of vapour compression cycle to explain why it is possible to get heat from it. I go through existing devices and how they utilize heat. Also I estimate possible magnitudes in case under study and compare those with heat from exhaust air.
Also I describe possibility of utilising heat of waste water, advantages and disadvantages of this type of heat recovery and existing devices. Then I make evaluation of practical case and compare it with magnitudes of heat from exhaust air.
As conclusion I give my opinion about validity of different types of heat recovery and existing devices and schemas
