The application of blockchain technology in Finnish airline catering supply chain

Blockchain technology has evolved beyond the world of cryptocurrencies and it has risen to prominence as a promising technology that is adopted in multiple industries. Blockchain adoption is also growing at a significant pace in recent years and it is believed to be one of the technologies that may pose a major impact on the future of airline industry. Despite the promises and vast potential of blockchain technology, its adoption in airline catering supply chains is still underexplored. The aim of this research is to understand challenges and trends faced in the Finnish airline catering industry, and to gain insights into the feasibility of blockchain technology in addressing these current challenges and trends the industry encountered.
This study is conducted as qualitative research applying single case study as the research approach and semi-structured interviews as the data collection method. The interviewees were selected using expert sampling who are professionals within the aviation catering supply chain in Finland. There are altogether three interviews conducted. The research data was collected during November-December 2022.
The research findings have discovered four challenges: supply chain disruption, cost pressure, transparency and sustainability, that are currently faced by the Finnish airline catering. Four emerging trends in the Finnish airline catering industry are also identified from the research findings which are transparency, outsourcing, sustainability management and digitalization. Based on the challenges and trends discovered in the industry, several potential implications of blockchain-based solutions were suggested which are digitalized information sharing, transparency in supply chain activities, management of supply chain network and brand promotion.
