Tiivistelmä
Sous vide -metoden innebär att produkter först vakuumpackas och därefter kokas länge i låg temperatur innan de till sist kyls snabbt ner. Köttprodukter som kokas i låga temperaturer behöver en lång tid för att bli möra och kulinariskt högklassiga. Då man tillverkar sous vide- produkter med lång hållbarhet industriellt, måste man uppnå bra pastöriseringsvärden och samtidigt skall produktionen vara effektiv. Genom att höja temperaturen i kokprogrammen kan man förkorta kokningarna och pastöriseringsvärden blir samtidigt bättre.
När koktemperaturen höjs, koktiden förkortas och ugnarna utnyttjas effektivare, blir den sensoriska kvaliteten tyvärr ofta sämre. En högre koktemperatur ger i regel mera koksvinn och torrare produkter. Koksvinnet kan inte heller alltid tas tillvara, utan för en del kunder är svinnet helt enkelt avfall.
En del produkter, som t.ex. innehåller mycket bindväv, behöver en rätt hög temperatur och dessutom en ganska lång kokning för att bli riktigt möra, så hög temperatur är inte alltid någonting negativt.
Under detta projekt har det valts ut produkter som inte kulinariskt sett har den kvaliteten, som sous vide-produkter enligt teorin borde ha. Dessa produkter har testats genom att modifiera kokprogrammen i försök att förbättra den sensoriska kvaliteten. Samtidigt har pastöriseringsvärdet och produktionskapaciteten också tagits i beaktande, för att kunna utnyttja testresultaten även i praktiken. Sous vide method means that a product first is vacuum-packed, then cooked in a low temperature during a long time and last quickly cooled down. Low cooking temperatures require longer time to get the meat tender and with high sensory quality. In the industry, producing sous vide products with long shelf life, it is important to achieve good pasteurization values at the same time as the production has to stay efficient. By increasing the temperature in the cooking-programs the cooking time can be cut down and at the same time the pasteurization values will be improved.
However, the coin also has another side, while the cooking temperature increases, the cooking time cuts down and the ovens are used more efficient, the sensory quality gets poorer. A higher cooking temperature gives mainly higher cooking loss and dryer products. The cooking loss cannot always be stored which means that there is sometimes a loss for the customer.
Part of the products, e.g. those containing a lots of collagen tissue, needs a high temperature and still quite a long cooking time getting absolutely tender which means that a high cooking temperature is not necessarily something negative.
During this project I have picked a few of our products, which do not have the high sensory quality characteristic for sous vide products. Later the products have been tested, mainly by changing the cooking programs in order to increase the sensory quality of the products. At the same time the P-value and the production capacity has been taken into account in order to get successful test results and bring the benefits into practice.
