Tiivistelmä
The premiere goal of the thesis was to investigate the healthy food restaurant concept in Moscow. It has been well-reviewed nowadays-healthy food trend and its popularity, profitability of the business and attractiveness for the entrepreneurs. As a part of the analysis, information was included about customers’ interest in healthy food restaurant. The research tasks were the comparison of the healthy food restaurants concept in current Moscow market, which is not developed or popular neither well known, with potential business concept based on research findings.
The main restaurants, which was discovered, were «Healthy Food», «Fresh», «Fresh&Ko», «Jagannath» and «LavkaLavka». The applicable methods for writing thesis were the literature review, the online surveys, managers’ and customers’ interview and the author’s findings. The findings lead to the perception of the healthy food restaurants in Moscow as the vegetarian and Asian, the majority of the potential customers are not aware about healthy food concept.
As a result, there were modeled developed business concept for the healthy food restaurant. The findings were taken the future perception of the healthy Russian consumers’ stand. The feedback and suggestions of the guests was collected from each and every healthy food restaurants. The vision of the potential guests was discovered and also showed the absence of the healthy food restaurants in Moscow, instead of vegetarian options in plenty more of healthy concept. The conclusion has been done in a way that the chances for healthy food restaurants are many in Moscow if they implemented and well promoted as the guests were ready for the healthy food experience. The improvements, findings and developments in the results might be suitable for the healthy food restaurants and entrepreneurs.
