Porojen hyvinvoinnin nykytila poroteurastamoilla

Abstract

Tämän opinnäytetyön tavoitteena oli kartoittaa porojen hyvinvoinnin nykytila Suomen poroteurastamoissa sekä tarkastella mahdollisia kehittämisen kohteita ja teurastajien kouluttamisen tarpeita. Työn toimeksiantajana toimi Lapin ammattikorkeakoulun Porukkaoppi – Porotalouden porukalle lisäoppia -hanke. Hankkeessa mukana toimivat myös Paliskuntain yhdistys ja Saamelaisalueen koulutuskeskus. Tämä työ on osa laajempaa kartoitusta poroteurastamoiden nykytilasta.

Opinnäytetyön teoria paneutuu eläinten ja ennen kaikkea porojen hyvinvointiin sekä porojen teurastuksen säännöksiin ja valvontaan. Lisäksi työssä kerrotaan poron hyvinvointiin vaikuttavista tekijöistä teurastamon tarhoissa ja porojen tainnutuksessa. Teoriatieto on peräisin kirjallisuudesta, internetistä ja porojen teurastukseen liittyvältä asiantuntijaluennolta. Osittain teoriatieto pohjautuu omiin kokemuksiin, jotka olen saanut työskenneltyäni poroteurastamolla.

Tutkimuksen aineistona on käytetty yllä mainitun hankkeen auditointilomakkeisiin keräämiä tietoja ja havaintoja. Hankkeen projektipäällikkö Kirsi Muuttoranta ja projektisuunnittelija Karoliina Majuri ovat kiertäneet 16 poroteurastamoa teurastuskauden 2017/2018 aikana ja tarkastelleet 25 teurastusporukan toimintaa näillä teurastamoilla. Auditointilomakkeessa tarkasteltiin teurastamon ulkoalueita sekä porojen tainnutusta ja verenlaskua.

Tutkimuksen perusteella porojen hyvinvoinnin nykytila poroteurastamoilla on hyvä, teurastamon alue ja tarhat ovat turvalliset poroille ja poroja kohdellaan asianmukaisesti. Kehittämisen kohteita on kuitenkin havaittavissa muun muassa porojen tainnutuksessa. Teurastajia tulisi myös tiedottaa säännösten uudistumisista paremmin. Työn perusteella voisi olla tarvetta teurastajien kouluttamiselle ja mahdollisille jatkotutkimuksille porojen hyvinvoinnista.

The aim of this thesis was to chart the current state of reindeer welfare in Finnish reindeer slaughterhouses and examine possible development targets and training needs for slaughterers. The thesis was commissioned by Lapland University of Applied Sciences project Porukkaoppi – Porotalouden porukalle lisäoppia. The Reindeer Herders’ Association and the Sámi Education Center are also involved in the project. This thesis is part of a broader chart of the current state of reindeer slaughterhouses.

The theory of the thesis focused on the welfare of animals and, above all, on reindeer and the rules and control of slaughtering. In addition, the thesis explains the factors affecting reindeer welfare in the slaughterhouses and the stunning of reindeer. Theoretical information is from literature, the internet and an expert report on the slaughter of reindeer. Theoretical knowledge is based on the author’s own experience gained from working at a reindeer slaughterhouse.

The data and observations from the above mentioned project audit forms were used as the research material. The project’s project manager Ms Kirsi Muuttoranta and project designer Ms Karoliina Majuri have visited 16 reindeer slaughterhouses during the slaughter season 2017/2018 and reviewed the operation of 25 slaughterer crews. The audit form included a study of the outside areas of the slaughterhouses and the stunning and bleeding of reindeer.

According to the study, the current state of reindeer welfare in reindeer slaughterhouses is good, the slaughterhouse area and yards are safe for reindeer and reindeer are treated appropriately. However, development targets can be observed, among other things, in the stunning of reindeer. Slaughterers should also be better informed about the regulatory reform. Based on the thesis, there might be a need for training for slaughterers and possible further research on reindeer welfare.
