This thesis work was executed at the Quality control and R&D lab Roal Oy, Rajamäki. The objective of this thesis work was to validate lipase activity method, because Roal’s Quality control department was planning to change current reference material from liquid sample to dry sample. This thesis study includes comparative study between QC lab and R&D Lab titrator. This assay is titrimetric method. During hydrolysis process, butyric acid (free fatty acid) is released from triacylglycerol, enzyme lipase works as a bio catalyst. NaOH work as a titrant. The enzyme lipase activity decides the consumption of NaOH. Method of analysis constitutes sample incubation and end point alkaline titration of released acids. pH-stat titrator instrument is commonly used.
