This Product-based thesis aims to create an analytical business plan for a special restaurant concept, a restaurant with a retro 80s vibe that combines the cocktail bar with a burger restaurant concept, a concept which is designed to be located in the Helsinki centre.
The theoretical part of the document covers theories related to entrepreneurship and entrepreneurship in restaurant context in Finland, it explores business planning literature and providing information about various business plan models and business plan elements, while discovering the strategic management tool business model canvas.
The author uses the business model canvas in two different ways for the research process, firstly as benchmarking tool, the author collected information of the competitor set based on the business model canvas building blocks, and secondly, as an interview tool, the author used specific building blocks of the business model canvas to create interview questions regarding restaurants from the customer perspective.
As the product of this product-based thesis, the author created the McKeever ‘s quick version business plan with some adjustments to fit better in the concept of Cocktails & Brgrs. In addition to the business plan, the author created a business model canvas and through its building blocks explains the Cocktails & Brgrs concept.
