The paper examines the operational and financial performance of a restaurant chain based in Tampere, Finland. The objective of the paper is to research different methods of measuring profitability, performance and discover weak links in restaurants, and eliminate the weak links.
Analysis and calculation theories and formulas are introduced, and the implementation of the findings and metrics are presented using Excel spreadsheets, that show the reader different points of view on different costs regarding the company’s different departments. The simulations provide crucial insights on the effects of different methods of operation for example Logistics, Ownership of equipment, and salaries, the simulations give different variables to show how the total costs move.
The results and methods are made to be used, played around with, and implemented in the case company’s operations. The research and findings are also projected for other entrepreneurs to use, and to improve their operations.
