This thesis investigates Asian travellers’ dining choices and expectations, concentrating specifically on their opinions toward Vietnamese vegetarian cuisine.
The thesis firstly goes through theories related to vegetarianism, dining experience in general and other factors such as food quality, service quality, ambiance and cultural authenticity. The author also provides some facts about vegetarianism in Asian countries as a background of Asian tourists. The following part is about the methodologies which are used in the thesis. In this part, the author gives the justification for the use of these methods. The data collection is to illustrate the process of collecting data from both commissioner and the online survey. Each data is explained thematically in the insight’s parts. The result of these data is analysed more detailed in the results part. In the end, the author will summarize the thesis with practical suggestions for Vietnamese vegetarian restaurants to create a memorable experience.
By integrating the insights from both the interview and the online survey, this thesis identifies several strategies for Vietnamese vegetarian restaurants to serve a better experience to Asian tourists. These suggestions adopted eventually provide valuable guidance for restaurant owners and managers seeking to attract and satisfy a diverse and discerning customer base, promoting the broader acceptance and enjoyment of vegetarian cuisine in the region.
