This study examines the development of new business models in the restaurant industry, focusing on risk management and circular economy concepts in response to the sector's increasing complexity and market dynamism. Using a mixed-methods approach, the research combines quantitative analysis of secondary data, such as industry reports and financial records, with qualitative insights from semi-structured interviews with stakeholders, including industry experts, restaurant owners, and patrons. Statistical tools identify trends and correlations influencing innovative strategies, while interviews provide a deeper understanding of experiences and opinions. The study emphasizes the importance of stakeholder collaboration in driving innovation and sustainability, offering practical recommendations for adapting to changing market conditions and fostering sustainable economic growth in the restaurant sector.
