This thesis was written in the format of a diary with an aim to develop restaurant. I took over one sushi restaurant in Helsinki and recorded many practices cases and theoretical knowledge during the entrepreneurship process.
This thesis is divided into four main sections. In the introduction section, I describe my business ideas of restaurant entrepreneurship. I write much theoretical knowledge in the background section. In the third section diary, I record the actual ten-week entrepreneurship life. It is about how I adjust restaurant strategy and how the market reacts. And based on market reaction, how I apply theoretical knowledge in improving restaurant strategy. In the summary section, I conclude some practical ways in restaurant entrepreneurship. That may give a reference to the other new entrepreneurs.
This thesis is also a proof of methodology. By analyzing diaries and combining theory with practice, restaurant entrepreneurship can develop steadily.
