The COVID-19 pandemic had a profound impact on the global food service industry, leading to the closure of traditional restaurants and the emergence of innovative models like cloud kitchens. The objective of the thesis was to conduct an opportunity analysis to investigate the feasibility of implementing cloud kitchens in the Helsinki region after the pandemic. The study aimed to examine the specific challenges faced by tradi- tional restaurants in Helsinki. The goal was to explore the existing cloud kitchen market by evaluating factors such as market size, key players, and successful business models from other regions to determine the growth potential.
Using a comprehensive market research approach, the study assessed the demand for cloud kitchens in Helsinki. It gathered data through surveys, interviews, and focus groups to gain insights into consumer preferences, delivery habits, and consumers’ willingness to embrace cloud kitchen services. Additionally, the operational aspects, challenges, and opportunities associated with cloud kitchens were thoroughly analyzed.
The findings of this thesis provide a comprehensive analysis of the opportunities and potential risks of implementing cloud kitchens in Helsinki post-COVID-19. The study offers valuable insights into market potential, consumer preferences, and operational considerations, empowering entrepreneurs and restaurant owners to make well-informed decisions regarding investments in cloud kitchens. Furthermore, this research contributes to the existing knowledge on cloud kitchens in the context of post-pandemic recovery, serving as a foundation for future studies. The outcomes can also guide the development of strategies and policies aimed at supporting the growth of cloud kitchen businesses in Helsinki.
